High-Polyphenol Extra Virgin Olive Oil

Early-harvest Koroneiki EVOO from West Messinia, Greece, produced with one priority: preserving what nature created inside the fruit.

Theonios produces ultra-premium, high-polyphenol extra virgin olive oil from Koroneiki olives grown in our own traditional olive groves in West Messinia, Greece.


High-polyphenol EVOO begins long before extraction.

It begins with the variety, the soil and climate, the condition of the olive tree, the development of healthy fruit and one of the most consequential decisions a producer makes:

when to harvest.


What Is High-Polyphenol Extra Virgin Olive Oil?


Polyphenols are naturally occurring compounds present in olives and extra virgin olive oil.

They contribute to the characteristic bitterness and pungency of fresh EVOO and play an important role in its oxidative stability.

Their concentration is influenced by numerous factors including olive variety, fruit maturity, environmental conditions, tree physiology, harvesting and extraction.

For this reason, genuinely high-polyphenol olive oil cannot simply be manufactured at the mill.

Its potential must first be cultivated in the grove.


Why Koroneiki Olives?


Koroneiki is the indigenous Greek olive variety at the heart of Theonios.

Small-fruited and exceptionally well adapted to Mediterranean conditions, Koroneiki is internationally recognised for producing distinctive extra virgin olive oils with aromatic complexity, stability and significant phenolic potential.

At Theonios, these olives grow across traditional hillside estates in West Messinia, where each grove is managed according to its individual conditions.


Why Does Theonios Harvest Early?


As olives mature, their oil content generally increases while their chemical and sensory characteristics evolve.

Waiting longer can therefore mean more oil.

Theonios deliberately chooses another path.

We harvest while the Koroneiki fruit is still green, selecting timing according to fruit condition, physiological development and the characteristics we seek in the finished oil.

Early harvesting means accepting a substantially lower oil yield.

That sacrifice is intentional.

We do not determine harvest according to how much oil the fruit can give us, but according to the quality of the oil we believe it can become.


Why Is High-Polyphenol Olive Oil Bitter and Peppery?


Bitterness and pungency in a well-made extra virgin olive oil are not defects.

They are important sensory characteristics associated with the presence of phenolic compounds.

A fresh early-harvest Koroneiki EVOO may therefore reveal green aromas followed by structured bitterness and a characteristic peppery sensation in the throat.

Theonios is not designed to become invisible when tasted.

It is intended to have identity.


Protecting Phenolic Potential After Harvest


Once olives leave the tree, preserving quality becomes a race against time, temperature, physical damage and oxidation.

Theonios fruit is handled carefully and transported rapidly for extraction.

After production, the oil is transferred to stainless-steel tanks equipped with closed-circuit nitrogen protection, minimising exposure to oxygen. Jacketed temperature control protects the oil during storage, while bottled production is subsequently maintained under cooled conditions away from excessive heat and light.

The objective throughout the chain remains unchanged:

protect what the fruit gave us.


High Polyphenols: Measured, Not Marketed


Every harvest is different.

Phenolic concentration therefore should not simply be assumed because an oil is green, bitter, expensive or harvested early.

Theonios uses independent laboratory analysis to evaluate each production.

For us, the phrase high-polyphenol extra virgin olive oil must ultimately be supported by measurement.

The story matters.

The terroir matters.

The craftsmanship matters.

But the oil must prove itself.
